Gulkana's Fishing Process
Fresh-Processed at Sea—Headed & Gutted
"Fresh-Processed at Sea—Headed & Gutted" (PAS-H&G)is the primary product form I produce. Here's how it works:
- Catch - Immediately after capture the fish are live bled in an immersion tank;
- Storage - The catch is processed and stored in a dressed product hold in layered ice to keep them chilled for the duration of our fishing period (typically, periods range from 12 to 36 hours);
- Package - Within two hours after the close of a fishing period, we are back in Cordova to box up our catch;
- Ship - Once packaged, we deliver our product to the Cordova airport for shipping via Alaska Airlines (or their partner, Northwest Airlines) to destinations in the lower 48. We can also ship smaller orders via USPS Express mail Service or FedEx First Overnight Priority.

Because I as a fisherman am the legal entity to harvest this wild salmon from the waters in our region of Alaska and as the first owner in the chain of custody, the fisherman has everything to do with how and where the quality bar is set once the salmon has been harvested. We exceed the quality standards that are generally accepted and used in a river mouth net fishery in ways that maximize the overall quality and shelf life of the product form we produce. Quality Assurance

Aside from using high-quality packaging materials, we involve technology: a small data logger that monitors date, time, and temperature. With this device we can audit whether the shipment has been subjected to adverse handling such as being exposed to a high-temperature area for a length of time. We ask our customers to return these devices because they are reusable. Once received, we extract their data to verify the temperatures to which they were subjected while in transport to you. We can then e-mail or fax this temperature graph to you for your review.
